Luscious Lime Parfait
The ultimate over the top Frozen Nectar!
- Sprigs of fresh mint
- Grated rind of one lime
- Juice of 2 limes
- 1 can condensed milk
- 20 oz double or whipping cream
Pour condensed milk into a bowl and mix with the lime juice and grated lime rind.
Whisk the cream until thick and making peaks. Gently mix the cream into the condensed milk until combined.
Line a loaf tin with cling film. Pour the mixture into the tin and smooth top.
Freeze for 2 hours. Remove from freezer to room temperature for around 45 minutes before serving.
Turn out the lime parfait on to a flat surface and slice into individual servings. Garnish each serving with a sprig of fresh mint.
